Vegan MoFo Day 7: Lasagna!

Last night I made lasagna from The Vegan Stoner Cookbook

It was delicious! One thing I really liked about the recipe is it had vegan cream cheese mixed in with the tofu to make “ricotta”. I had never done this before when making lasagna but I definitely will from now on!

I also made garlic bread: tons of garlic, earth balance, parsley, and crushed red pepper for a little kick! I can’t wait to try more recipes from The Vegan Stoner Cookbook.

Tonight is pizza night!

Current Obsessions

Things this week I’m obsessed/excited about:

Coconut Bliss Dark Chocolate Ice Cream! It’s sweetened with agave, gluten free, and soy free. The flavor is so delicious, I’m normally not a chocolate ice cream flavor kind of girl but this stuff is amazing!

The Vegan Stoner Cookbook!

I pre-ordered it some time ago and yesterday it came in the mail! The Vegan Stoner is one of my favorite recipe blogs; I am really excited they came out with a cookbook. It is so cute inside; very colorful! There is a reference section in the back which includes a substitution chart and also some very helpful “how to’s” I can’t wait to start cooking some of the recipes!

Vegan MoFo Day 4

Alright, It’s day 4 of Vegan MoFo and I’m off to a rough start; I will persevere! Bentley had a playdate and I completely forgot to take pictures. Grr. Tonight was a simple comfort food night, I made baked barbecue tofu, red quinoa and rainbow chard. I LOVE rainbow chard! I love the colors, the flavor, pretty much I love everything about it. Honestly I think I may even prefer it to kale (gasp!). Has anyone tried making chard chips? Maybe I’ll give it a shot!

Vegan MoFo!

Vegan MoFo has begun! It is my first time and I’m really excited! Bentley and I have moved to San Francisco; we’ve been here about a month. With all the moving and adjusting I haven’t had time to blog. Which is one of the many reasons I signed up for Vegan MoFo. This will be my first time participating; I don’t have any solid themes (yet) but my current obsession is making the perfect spinach dip. I made one last night, not my favorite but i’ll keep tweaking the recipe until it is perfect!

Spinach Dip

1 package frozen spinach (thawed & drained)

1 container vegan cream cheese

Half an onion diced

1/2 cup Vegan Mozzarella

Half red pepper diced

1/4 jalapeño finely diced

Salt to taste

 

Sauté onions and red pepper, and jalapeño till soft, then combine spinach, cream cheese, mozzarella, and salt in a baking dish and bake at 375 F for 20-30 min.

Side note: I’ll be posting about my candida diet sometime this week!

Also Bentley and I have been checking out the parks nearby and our favorite is Alta Plaza; the grass is tall and Bentley feels like he is on a safari! Its the cutest!

Candida

Recently I was diagnosed with Candida; an overgrowth of candida albicans yeast in the intestines which can cause a number of symptoms ranging from headaches, rashes, recurring yeast infections, UTI’s etc. We all have this yeast in our gut but it can get out of control due to antibiotics, high sugar diet, birth control pills, smoking, food allergies and more. The only way to get it under control is to follow a Candida Diet which is very restrictive, as a vegan I have grown accustom to reading food labels and being creative in the kitchen so it didn’t seem too bad when my doctor handed me a (very long) list of foods I can and can’t eat.

No fruit for two weeks (this one sucks because I LOVE fruit)                                                                           No grains for one week                                                                                                                     No sugar, no alcohol, fermented foods, no yeast (obviously), no breads, white flour etc

What I can eat:

Veggies! All veggies, beans, lentils, nuts, nut butters, tofu (non gmo soy), soy yogurt, Earth Balance (FUCK YES), olive oil, and spices.

I am currently at the end of day 3 of the candida diet; So far so good. I have had headaches and nausea the past two days. Ive been drinking a lot of water to flush it out and it has made a huge difference! The first day I made this giant salad: Kale, herb spring mix, cucumber, sprouts, grape tomatoes, orange pepper, avocado, and black beans. I used lemon and olive oil for the dressing. So yummy!

Easy and simple meals so far! I’ve been on Pinterest a lot looking for vegan candida recipes and ideas. There isn’t a lot of info on vegan candida diet which is part of my motivation for blogging my experience. Now on to drinking a huge glass of water and cuddling Bentley!

 

Bentley!

Meet Bentley, a six year old basset hound I adopted in March 2012 from Utah Friends of Basset Hounds rescue. Such a handsome hound! Bentley has agreed to let me share our adventures together. Vegan food, dog parks, hound cuddles and random silliness to follow!
